Spanish rice

Spanish Rice

1-1/2 cups of rice
2 cups of chicken broth or stock
1 cup of plain tomato sauce (not paste), stewed tomatoes can be substituted
3 cloves of garlic (pressed, or finely chopped)
1/4 of a large onion
2 Tablespoons of Oil


  1. in a Skillet on medium heat, saute the Onion, and garlic till softened
  2. then add dry rice stir for about 5 min till the rice becomes golden brown
  3. Add Chicken broth and tomato sauce (slowly) stir it up, and bring to boil
  4. as soon as it starts to boil, turn heat down to a simmer
  5. cover the skillet with a lid and let simmer for about 20 min.
  6. after rice is cooked, stir it up and serve.
