Spanish Rice
1-1/2 cups of rice
2 cups of chicken broth or stock
1 cup of plain tomato sauce (not paste), stewed tomatoes can be substituted
3 cloves of garlic (pressed, or finely chopped)
1/4 of a large onion
2 Tablespoons of Oil
- in a Skillet on medium heat, saute the Onion, and garlic till softened
- then add dry rice stir for about 5 min till the rice becomes golden brown
- Add Chicken broth and tomato sauce (slowly) stir it up, and bring to boil
- as soon as it starts to boil, turn heat down to a simmer
- cover the skillet with a lid and let simmer for about 20 min.
- after rice is cooked, stir it up and serve.
